At Faerie Tree Cottage, the kitchen is our modern cauldron. It is the place where delicious soups and savory meals are prepared using locally procured meats, vegetables, fruits, dairy and poultry. Fermented vegetables and cultured dairy foods are lovingly prepared following traditional guidelines. Herbal infusions and tonics are made with care and will shower you with nature’s potent medicines.

 

Real food nourishes body and soul and induces joy. During our time together we will learn the foundations of how to prepare what I refer to as “grandmother wisdom foods.” Emphasis will be placed on healing and maintaining a healthy gut, which will promote proper digestion and assimilation of the gorgeous meals we’ll be partaking. The GAPS protocol will be a guiding light along with ancestral recipes from Sally Fallon’s Nourishing Traditions.

Fermentation is an ancient technique designed to preserve food. Fermented foods are teeming with probiotics and enzymes and they act as both a digestive aid and a means to colonize the gut with beneficial bacteria. This results in proper digestion and nutrient absorption, which has a ripple effect in the body producing a strong immune system, resistance to disease, great looking skin and a vital and vibrant constitution. The gut is the second brain and when the gut is brought into balance so too is the brain, which means depression and anxiety are mitigated along with other neurological challenges. 

At Faerie Tree Cottage we will learn how to make sauerkrauts, beet kvass, Lacto-fermented pickles, raw milk kefir, kombucha, Lacto-fermented ginger soda and more. You will be showered with a variety of these beautiful ferments each day, which will endear you to their taste as well as their extraordinary nutritional gifts.

Herbal infusions are an easy way to deliver medicinal and mineral gifts from the garden to the body. Dried herbs steeped in hot water for several hours will support both body and mind. Daily infusions will be offered during your stay and we will work with specific herbs during each quarter so that students develop not only a familiarity with the plants but also a relationship to the spirit of the plant and its folklore. We will also make herbal tinctures, vinegars, bitters and oils.    

The result is a relationship to the plant teachers that is established and maintained throughout life, which will serve not only body and mind but also spirit and soul.

Traditional Leavened Sourdough toast or toasted almond-flour bread, slathered with raw Amish butter, shmeared with avocado and topped with pastured eggs finished with homemade sauerkraut.

Roasted vegetables w/ toasted pine nuts
